This is the yummiest meatloaf around, so moist and full of flavour. My mum use to make it when we were kids, she still does and my kids love it just as much as I do. Great hot or cold (if you can leave it long enough to go cold) The only meatloaf recipe very kiwi should have.
Meatloaf with BBQ Sauce
Ingredients
- 500 g Sausage Meat
- 500 g Mince
- 1 Cup Breadcrumbs
- 2 Onions
- 2 tsp Curry Powder
- Salt
- Pepper
- 1 Egg
- .5 Cups Milk
- .5 Cups Water
Sauce
- .5 Cups Water
- .5 Cups Tomato Sauce
- .25 Cups Worcester Sauce
- 2 tsp Vinegar
- .25 Cups Soft Brown Sugar
- 1 tsp Coffee Instant
- 30 g Butter
- 2 tsp Lemon Juice
Instructions
- Combine all meatloaf ingredients till well mixed and smooth.
- With wet hands shape into a loaf in oven dish.
- Cook for 30 mins at about 180c.
- Combine Sauce ingredients then pour over sauce and cook for another 45 mins, basting frequently.
Sauce
- Combine all ingredients, bring to boil, simmer for 5 mins.
