  2. My mother in law used to make this, always loved it but never knew its name. Great way to use up leftover ham at Christmas.

    I first came across this particular dish in 1974, served in the staff cafeteria at the Auckland Public Hospital of all places. I had thought it to be a popular New Zealand recipe, having never seen its like in England, Scotland, Canada, the United States or Australia, where I had lived and worked. I found it only in New Zealand.

    I vividly recall a dinner of grilled lamb cutlets, asparagus and Oak Hill potatoes. I also recall being so impressed with it I gobbled down two portions.

    I’d tried to duplicate the recipe several times over the years and I think I managed to get pretty close.
    Your recipe is probably the one I will follow when next I yearn for Oak Hill Potatoes, a symphony of
    comfort food ingredients in perfect harmony.

  4. Oakhill potatoes were served as a lunch dish when I was a nurse at Hawera Hospital some 60 years ago. Looking for a way to use an abundance of potatoes I was delighted to come across this old style recipe and made it that night. A bit of nostalgia for which I am grateful.

  5. Yes, Oakhill potatoes was on the menu when I was a trainee nurse, too, at Wanganui hospital also 60 years ago and some! very tasty! In the days when there was actually a kitchen with human beings onsite. I think we were blessed, and the patients.
